Real easy and fast preparation can also give great results, like in the case of sea fish and sea food, that do not require a lot of mess to taste good. The only down side is that you need to get these fish and seafood fresh, which is in Israel not always trivial. But then again, this is why these foods are special (and not only tasty), even though they are easy to do.
- about 3-4-5 prawns per person
- lime juice
- chopped scallion
- chopped coriander leaves
- several slices of red chili
- salt and pepper
- olive oil
Mix all the ingredient but the prawns and olive oil . Heat the olive oil in a pan, season the prawns with S&P and put in the pan. Fry shorty -until they become pink on one side, then turn them over, one more min (total of 2-3 min) add some of the lime sauce, toss and serve, with some more of the sauce on top. Make sure you have some extra lime sauce as dip.
Whole fish for 2:
- we used 500gr pink dentex (‘Farida’), whole, and clean
- 3 garlic cloves
- 1/2 cup of white wine
- olive oil
- a few tarragon leaves (2-3-4 not more because it have a strong taste)
- a few stalks (with leaves!) of oregano and thyme
- a few slices of green chili
- 20 cherry tomatoes (1,2,3 colors, as you wish)
- chopped parsley
Heat the olive oil in a sauce pan that can fit in the oven, and that can contain the whole fish. Cut 3 slits to the bone on each side of the fish. Shove some garlic in the cracks, and sprinkle the fish with salt and pepper from both sides. Fry the fish on one side for 2min, turn over, add the leaves and the rest of the garlic, toss a little. Add the tomatoes and the white wine and put in an oven preheated to 200°C. Bake for 8min if the fish is 500gr, 10 if it is 600-700, and 11 or so if it is 800gr. In any case the fish meat should just easily separate from the bones, not more, not less. This fish has a pretty ‘meaty’ texture, if you over bake it really gets dry. Sprinkle with chopped parsley and serve.
We served with oven baked potatoes (with some butter).
Just don’t feel insecure about making seafood and fish at home, if you buy them fresh and you cook them shortly you’ll do great (and fresh fish don’t smell!).
The leftovers are also a feast, for the cats!
