When I don’t have a lot of ingredients at home i make one ingredient soup. You probably all familiar with these kinds of soups.
I have carrots almost always, so here is a carrot soup. For this soup you will need:
- plenty of carrots, finely chopped
- one onion
- one garlic clove
- coconut milk
- chicken stock
- salt and pepper
Steam finely chopped onion, garlic, carrots and ginger with olive oil (or other oil) in a pan, covered. When everything is tender, add stock and coconut milk. Cook until it’s all very tender. ground and Season to taste.
Here served with rice and coriander oil (olive oil with coriander…)
